Our skilled chefs at Waltonwood are not only known for their appetizing main courses, but also for their tasty desserts that are sure to please everyone. Chef Andrew Fetzer of Waltonwood Cary Parkway has created a chocolate pecan pie recipe that residents have been raving about.
We couldn’t let National Pecan Month pass by without tempting your taste buds with the recipe, so here it is just for you.

CHOCOLATE PECAN PIE
(Baking time: 25 minutes)

Pie Shell
2 1/2 cups all-purpose flour
1 teaspoon salt
2 tablespoons sugar
3/4 cup unsalted butter
1/2 cup vegetable shortening
6 - 8 tablespoons ice water

       Preheat the oven to 375 degrees F.
       Put flour into a mixing bowl with the butter. Using a pastry cutter, cut the butter into the flour. Add salt and water. Mix until dough is formed.
       Roll dough out on flat surface to a 12-inch circle, about 1/8-inch thick.
       Carefully place onto a 9-inch pie plate. Gently press the pie dough down so that it lines the bottom and sides of the pie plate. Use a pair of kitchen scissors to trim the dough to within 1/2-inch of the edge of the pie dish.
       Bake until brown.

Pie Filling
2 cups pecan halves
3 large eggs, beaten
3 tablespoons, melted
1/2 cup dark corn syrup
1 cup sugar
3 ounces semi-sweet chocolate chips
1 prepared pie shell

      Preheat the oven to 375 degrees F.
      In a bowl, whisk the eggs and butter. Add the corn syrup, sugar, and chocolate chips. Mix well.
      Spread the pecans evenly along the bottom of the empty pie shell. Pour filling mixture into prepared pie shell.
      Bake for 25 minutes. Cool completely before serving.
