Residents gain a comforting community atmosphere when dining at Waltonwood, and eating with others has been shown to improve a person’s well-being and sense of belonging. We pride ourselves on our ability to offer residents menu alternatives for restricted dietary plans.
Our Ashburn chef and culinary team attend to residents’ individual needs by developing a dietary program that encourages good nutrition, with accommodating food choices to meet everyone's preferences.
Additional culinary and dining options include:
- Restaurant-style dining — Rather than limiting residents to a couple of standard entrée choices, we now have a menu that we rotate with the changing seasons, in addition to our daily menu selections.
- Exclusive chefs and hospitality professionals — In 2017, Waltonwood Ashburn added a pastry chef to our culinary staff, specializing in upscale creations that include pulled sugar and chocolate work.
Chef John Harder was born outside Chicago, in Hinsdale, IL, and raised in San Diego, CA. John developed a love food and cooking at a young age cooking with his mother and grandmothers. When John realized that traditional schooling wasn’t working for him, he decided to try his hand at cooking professionally and got his first restaurant job at Restaurant 808 in La Jolla, CA. Restaurant 808 was a pacific rim seafood restaurant, where he learned from acclaimed chef Jean-Marie Josselin. From 808 he moved on to Mr Tiki’s Mai Tai Lounge in downtown San Diego’s Gaslamp Quarter. After a year there learning the art of sushi making, John took a position at Barona Resort and Casino in Lakeside, CA. At Barona, John enrolled in a 2 year long ACF apprenticeship program where he rotated through all of the kitchens at the casino and graduated at the top of his class. John from there took a chef position at the steakhouse at Barona. From there John moved to Frederick, MD, to work at Hollywood Casino at Charles Town Races. John spent 4 years at the casino there working his way from Sous Chef to Chef de Cusine to Chef Tournant. After his time at the casino, John was looking to make a change in his life, and wanted to spend more time with his growing family, so he accepted the position as Executive Chef at Ashby Ponds, in Ashburn, VA. After learning the senior living industry, John has come over to Waltonwood Ashburn as the Culinary Services Manager, and is looking forward to getting to know each and every one of the residents.
John lives in Leesburg with his wife Lyndsey and kids, Gavin, Blake, Cody and Mia.
